Put any group of Singaporeans in a room and inevitably, the conversation that ensues will turn to food. We live to eat and love nothing more than talking about what we are going to have at our next meal.

For Singaporeans living and working abroad, the one thing they talk about missing the most is the food. Of course, they also miss their friends and family — which is only natural. We often miss the ones we love when oceans and borders separate us. But when we delve a little deeper and ask these Singaporeans what special memories they have of their dearest and nearest, almost without fail, these memories revolve around meals. Meals prepared by loved ones or enjoyed at favourite restaurants, amidst much laughter and joy.

Every day, the Singaporean thinks about food. About what she’s going to have for breakfast, lunch or dinner. Often, he will find himself sitting at his desk at work day-dreaming about his favourite hawker stall or his mother’s famous (to him at least) chicken curry. When no one is watching, she will be surfing food blogs, checking up on the latest Singaporean restaurants and also scouring sites for recipes that remind her of home.

To make the next year and half a little more mouth-watering, we asked 18 Singaporean foodies (some are chefs, others are cookbook authors or cookery teachers, and one is the country’s foremost authority on hawker food) what one dish, to them, reminds them of home. Of family and friends. Of Singapore.

Some of their choices are surprising; others, classic. Most of them are simple, while others will take a little time to master. All, though, are very special. We hope they become special to you, too. And remind you of home.
